Stumbled Upon Bay Chefs Site

The stumble upon toolbar was recently installed in my browser. A friend told me about it, asked me to install it and invited me to be his stumble friend. I personalized my settings based on my interest and I was off stumbling on great websites. One of the first websites that I have stumbled upon is the Bay Chefs site - the official website of the California Cooking Academy. I was browsing over several pages of their website and it just completely got my interest. Cooking has been my obsession for a few years now but I haven’t really enrolling in a culinary school. I actually prefer learning how to cook on my own based on cookbooks that I regularly buy.

I hope to see more of these websites because they inspire me to do better and work harder on my cooking skills. My mom told me that I am gradually doing better in cooking and I never failed to surprise her. Sometimes I even mix up recipes and come up with my own. It’s a little risky and it isn’t successful at all times but it’s worth it when come up with a new one. Perhaps one day I will also be putting up a website for my own culinary school or have my own TV show aired. For now all I can do is learn on my own and browse over thousand of cooking websites that inspires me.

Mix it up!

Drinking was not really my interest a few years back but not since I have discovered how great Mixed Drinks are. They give color and excitement to drinking and I am amazed how these drinks are prepared. It is really fun and entertaining watching a bartender throwing the bottle of gin and mixer and putting up a show just to prepare a drink. I’m also currently trying to learn those cool mixing drinks that I recently saw during a night out and researching more Mixed Drink Recipes to try out with.

My friends and I also enjoy playing Drinking Games just to prevent boring moments during our gatherings. I personally like vocal drinking games because it requires the participation of my drinking friends.

Great Pizza!

I find Pizza with Swiss Chard and Bacon very special and consider it one of my favorites so I’d to share the recipe to you. I originally found this recipe in Yahoo. I hope you’ll also love it!

You will need the following ingredients:

1. 1/2 pound sliced bacon
2. 1 1/2 pounds Swiss chard, stems and tough ribs removed, leaves cut into 1/2-inch-wide ribbons
3. 1/2 pound Fontina or mild provolone cheese, shredded
4. Salt and freshly ground pepper
5. 1 pound pizza dough, at room temperature
6. 1 teaspoon extra-virgin olive oil

Pizza

Cooking it is also very easy. Here are the cooking directions:

1. Preheat the oven to 500 degrees F. Preheat a pizza stone or generously oil a large baking sheet. In a large skillet, cook the bacon over high heat until browned and most of the fat is rendered, about 6 minutes. Drain on paper towels and let cool, then break the bacon into 1-inch pieces.

2.Pour off all but 1 tablespoon of the bacon fat from the skillet and heat until shimmering. In a large heatproof bowl, toss the Swiss chard with the hot fat. Add the bacon and half of the cheese, season with salt and pepper and toss well.

3.On a lightly floured surface, roll the dough to a rough 14-inch round. Transfer it to a floured pizza peel or rimless cookie sheet, or to the oiled baking sheet. Spoon the Swiss chard topping over the pizza, leaving a 1-inch border of dough. Brush the border with the olive oil. Scatter the remaining cheese on top.

4.Slide the pizza onto the hot stone, if using, and bake for about 10 minutes on the stone or 16 minutes on the baking sheet, until the crust is golden and the cheese is bubbling. Transfer the pizza to a rack and let cool slightly before serving.
